Easy Corn Pulao as the name suggests is a quick and flavorful Indian rice using corn and cooked in a pressure cooker. This can be prepared quickly in about thirty minutes and needs just few ingredients. This pulao is ideal to send in lunchboxes, and you will love the color of the tiny yellow corn niblets and taste too.

In our household rice is usually prepared during weekends the rest of the weekdays it is different varieties of Indian flat breads like rotis, chappatis, or parathas. But occasional pulaos, when packed in lunchboxes to take to office, are okay with the family.
One such weekday prepared this. The subtle taste but flavorful Easy Corn Pulao was quite a hit and I have been told to make this more often.
I bought a packet of fresh corn niblets that is separated from the cob and is available in some stores. You may use the frozen variety too.
When using basmati rice care has to be taken while cooking since this cooks very quick and the grain turn mushy if not timed correctly. I have prepared the pulao in a pressure cooker and it just has to be cooked until two whistles. If cooking in a pan, then the pan has to be kept covered and intermittently sauteed and checked if the rice is cooked.
I made some roasted pepper flavoured papads to serve with the pulao. The other accompaniments were mango pickle, raita, and dal tadka. You can serve this pulao with any side dishes of your choice or simply some raita will do.
