The famous Indian dessert ‘the kheer’ is a must serve during celebrations and festivals. In south India, it is called ‘paal payasam’
Today, on the occasion of Tamil New Year and Vishu, made this payasam. Though all types of ‘payasams’ are okay with everyone in the family, the ‘paal payasam’ is the favorite and most liked.
This is pretty easy to prepare with the use of condensed milk.
Whenever I make kheer /payasam, I remember my mother’s traditional way of making it. She used to reduce the milk to the point when the milk acquires a pink color. In this the raw rice is cooked through directly in the milk, with constant stirring. It takes 1 to 2 hours.
