Black-eyed Red-Brown Cowpea Curry (Karamani/Chori Ki Dal)
Black-eyed Red-Brown Cowpea Curry (Karamani/Chori Ki Dal) is a simple but flavorful dal recipe using the cowpea legume.  Like its big brother ‘Lobia’ (the black-eyed cowpea) is rich in proteins and dietary fibers.

  1. Wash and soak the red beans over night. Pressure cook the beans next morning.
  2. Heat some oil in a cooking pan/kadai.
  3. Add the chopped garlic and ginger (alternately you can use ginger-garlic paste) and saute for 1 minute.
  4. Add the green chillies and onions and saute for few minutes until the onions turn pinkish color.
  5. Next add the chopped tomatoes and saute until the tomatoes cook through and turn mushy.
  6. Add the dry ingredients – turmeric, chilli, coriander, cumin, and salt and saute and mix well.
  7. Once the spices are well mixed with the onions and tomatoes, add the cooked beans and some water.
  8. Add more water according to the gravy thickness needed.
  9. Allow the curry to cook for another 3 to 4 minutes on low heat. Adjust spices.
  10. Remove from heat and pour into serving bowl. Garnish with coriander leaves.
  11. Serve as a side-dish along with one of these Indian breads – chappatis, phulkas, khulchas, naan or with any plain rice.
