Flat Green Beans/Avarakkai Sauteed
Flat Green Beans Avarakkai Sauteed is a simple vegetable dish that is stir fried. The beans are cooked along with the pods inside it like the french beans and unlike the broad beans.

Wash the beans, then cut the ends, remove the strings from both sides, chop them into small pieces.
In a mixer jar, put the coconut, garlic, cumin seeds, green chillies and 3 to 4 curry leaves and blend into a coarse, dry mix. Do not add any water. Keep this aside.
In a kadai add oil, when the oil becomes hot, add the mustard seeds, urad dal, saute until the dal turns brown.
Tear the red chilli into small pieces, add this along with curry leaves.
Add the chopped beans and saute for few seconds, add turmeric powder, salt, and water. Cover and reduce the heat. Check if the beans are cooked, if not add little more water.
Once the beans are cooked and the water completely evaporated, add the coconut mix and stir well.
Saute for 2 to 3 minutes. Remove from stove on to a serving bowl.
Serve as a side dish during lunch along with rice and any other gravy dish.
