Take the required quantity of idli batter in a bowl. Add the chopped onions, chillies, coriander leaves, curry leaves to this and mix well.
Grease the paniyaram pan and pour little oil into each cavity and heat the pan on the stove.
Pour spoonful of batter into each cavity, reduce the heat. Cover with a lid and allow to cook.
After a minute or so remove the lid and check, the paniyarams will start appear cooked and the underside browned. With the help of spoon or fork flip the paniyaram to cook the other side. Cover with lid once again
If required you may drizzle little oil over the paniyarams.
After the paniyarams are cooked through on both sides, remove them.
