Olan – Yellow Pumpkin And Red Cowpeas In Coconut Milk
Olan, a simple dish with very few ingredients from Kerala, is prepared with ash gourd (white pumpkin) or the yellow pumpkin (mathanga/kaddu) and red cowpeas stewed in coconut milk. This is one of the side dishes of the Onasadya (an elaborate spread of meal exclusively prepared during Onam festival).

  1. Soak the cowpeas for 4 hours prior to preparation, then cook it.
  2. Peel the outer skin of the pumpkin and remove the center fibrous part and the seeds. Dice the pumpkin and slit the green chillies.
  3. In a pan, cook the pumpkin and green chillies in little water; enough to cover the pumpkin.
  4. When the pumpkin is cooked, add the pressure cooked cowpeas and salt and continue to cook this for 2 to 3 minutes until only very little water remains.
  5. Add the coconut milk and stir well and reduce the heat. Add curry leaves and drizzle some coconut oil.
  6. Transfer olan to a serving dish. Serve with rice and pulissery (curd-based curry).
