Simple Peanut Sundal
 Are you nuts about peanuts? Then you will love this simple boiled peanuts mildly tempered with with mustard seeds, chillies, curry leaves and garnished with coconut. Yes, sharing one more ‘sundal’ recipe that can be made during Navratri. Not only are they high in protein, peanuts contain the ‘good’ fat i.e. Omega-3 and Omega-6 that is very much needed for a healthy heart. The skin of the peanut is rich in antioxidants so the best way to eat peanuts is with the skin on; roasted or boiled.

Ingredients
Instructions
  1. Wash and soak the peanuts overnight or for 5 to 6 hours.
  2. Pressure cook the peanuts with little salt and the same water in which it was soaked for 3 to 4 whistles.
  3. In a kadai, heat up the oil. Add mustard seeds, then the urad dal and saute until the dal turns brown.
  4. Add the asafoetida, red chillies, curry leaves and saute for few seconds.
  5. Next add the boiled and cooked peanut and coconut and saute on low heat. Add salt after checking the taste. Mix together for a minute.
  6. Serve in individual cups or small bowls.
