Black Urad Dal Rice, Uluntham Paruppu Saadam
A traditional and healthy rice preparation using the black urad dal or uluntham paruppu as it is called in tamil. This recipe is from the Tirunelveli region of Tamil Nadu.

  1. Wash the rice well, drain and keep aside.
  2. Dry roast the black gram or urad dal or uluntham paruppu until it turns slightly brownish and roasted aroma comes out. Remove and keep aside.
  3. In a pressure cooker, heat 1 tbsp of sesame oil, add the fenugreek seeds and saute for few seconds.
  4. Reduce the heat, next add the grated coconut, roasted urad dal, rice, and salt. Saute and mix everything together.
  5. Add three cups of water. Mix again. Taste little of the water to check if the salt is enough.
  6. Close the cooker lid and put the pressure whistle. Cook for 3 to 4 whistles or according to your cooker.
  7. Serve the uluntham paruppu saadam or urad dal rice along with some sesame oil or warm ghee, freshly grated coconut, and black sesame chutney. Other vegetable stir-fried dishes and appalam or papad are the other accompaniments that can be served.
Recipe Notes

The traditional way to eat this healthy Uluntham Paruppu Saadam or Urad Dal Rice is to drizzle some sesame oil or warm ghee over the rice, then mix this with Roasted Black Sesame Chutney (Ellu Thuvaiyal), you may also mix some freshly grated coconut to this.  Have this with appalam or papad and other side dishes.
