Wheat Bran And Vegetable Flat Bread/Paratha
Wheat Bran And Vegetable Flat Bread/Paratha is a healthier way to have your parathas.  The use of high fiber bran along with some wheat flour to make the parathas is good as the wheat bran is packed with zinc, protein, and iron.  I add couple of tablespoons of bran to the regular wheat flour in the everyday preparation of rotis and parathas.

  1. In a wide bowl take wheat flour and bran.
  2. Add the grated carrot, radish, and onions.
  3. Next add the coarsely crushed green chillies, salt, and carrom seeds.
  4. Add 1 tbsp of oil and mix all the ingredients and bind into a dough adding water little by little.
  5. Note: Do not add more water than necessary as the moisture from radish and onions will ooze some water later. This will make it difficult to roll out the dough.
  6. Keep covered for 20 minutes. Divide into equal portions of about 12 to 15 balls.
  7. Roll out each ball with some dusting flour into 7 cm diameter circles.
  8. Heat a flat tawa. Place the rolled out roti on it.
  9. Flip to other side and apply oil and once again flip over and apply oil on this side too.
  10. Cook the parathas on low heat and use spatula to press it down so that it cooks evenly.
  11. Remove when brown spots appear on both sides and the parathas become slightly toasted.
  12. Prepare the remaining parathas in the same way. The parathas appear very dry because of the bran but they are tasty with all the spices and veggies.
  13. Serve with mixed vegetable raita and garlic pickle.
