Usually I chop the vegetables the previous evening for next day’s lunch. I decided on bhindi/okra. Aloo bhindi? no, just made potato based curry recently. Masala bhindi, no, this will not interest my blog readers. Sometimes you have some odd vegetables in the refrigerator that you think will not go together, but unless you put them together you cannot be sure. Instantly, decided to make a vegetable dry curry with okra and carrot.
Now okra or bhindi is vegetable that cannot be cooked directly along with other vegetables. It has to be sauteed separately to remove the sliminess.
So, stir fried the bhindi separately and also stir fried the carrots to give a nice crunchy bite. The final dry curry/sabzi came out well. Served it with wheat parathas.
