Upma From Leftover Wheat Parathas is a quick breakfast idea with previously made parathas or rotis. Also ideal for lunch and can be sent in tiffin boxes.
There were about eight wheat parathas left from previous day’s dinner as the children ate out after a movie show. I put it away in the refrigerator (oh what would we do without this kitchen invention!).
A bit similar to the ‘kotthu paratha’ that is available in south Indian restaurants. Typically it is made from the malabar parathas. I have used oil very sparingly and the parathas used in this recipe is ghee smeared and folded and then rolled out and baked. Diced onions and capsicums, pureed tomatoes, and chopped green chillies is all you need to dish up this quick and tasty meal. Ideal for lunch boxes too.
