Urad Dal Uluntham Paruppu Saadam is a traditional and healthy rice preparation using the black urad dal or uluntham paruppu (in tamil). This recipe is from the Tirunelveli region of Tamil Nadu.
I have not made this Black Urad Dal Rice (Uluntham Paruppu Saadam) in the recent years. Though I have this listed in my diary under ‘Recipes To Post on Blog’. Last Sunday while rummaging through the list, ticked off ‘Uluntham Paruppu Saadam’ i.e. chose to prepare the Urad Dal Rice and subsequently post the recipe on the blog for my followers.
The split white urad dal without the black skin can also be used, but using the dal with its black skin tastes better.
The urad dal is packed with minerals and is rich in protein and Vitamin B. Also known as black urad dal and widely used in Indian cuisine especially in south India. In most staple food of southern India, like the vada, idli, dosa this dal is used.
Coming back to this rice, it does not look very appealing to the eyes, but believe me the subtle flavor of this healthy rice mixed with the special chutney definitely gives the taste buds a unique experience.
I notice that recently people no longer cook some of the old and traditional food preparations. This urad dal rice or uluntham paruppu saadam is one such.
So I was glad that my daughter-in-law who was eating this for the first time, truly liked it. Both my sons of course have had this before and don’t mind having this for lunch once in a while though this is not one of their favorites.
The urad dal has to be roasted well before cooking it along with the rice. The use of fenugreek or methi seeds and garlic and coconut and sesame oil is all the ingredients used with no other spices or herbs. The best combo to go with the rice is the sesame chutney. Usually black sesame seeds are used, they are roasted and used along with roasted dry red chilli, tamarind, salt, coconut and ground into a paste or chutney.
Little quantity of sesame oil (gingelly oil/nalla ennai) is first put over the rice, then the sesame chutney is mixed evenly with the rice. Add some grated coconut (optional). Serve other vegetable dishes and fried appalams or papadam along the rice.
