‘Kootu’ is a common side dish served with rice as lunch in South India. Vegetables like ash gourd, curry cucumber, pumpkin, cabbage are used in kootus.
The common ingredient among the different variety of ‘kootu’ is the coconut paste. The coconut must not be ground very smoothly, a little grainy texture is required.
