Diced Paneer and Tomatoes in Coconut Milk is a recipe that got made just like that one morning. I was to make something with paneer and all of a sudden thought of making it similar to a stew using coconut milk as gravy.
Though there are umpteen different dishes that one can cook up, every morning and again in the evening we are left wondering ‘what to cook today?’ The ‘menu plan’ prepared religiously every other month is neatly pasted on the side of the refrigerator with the fridge magnet memorabilia. These are judiciously followed for few days and then we are back to ‘what to cook?’
This morning was one such day, got up 30 minutes late. No meal planning done before hand. Staring absent-mindedly into the refrigerator and hoping for some leftovers. Nothing, only some rice and dosa batter and chappati dough. Something to go with the chappatis had to be decided. There was a packet of paneer – okay then a paneer dish with onion-tomato-ginger-garlic and spice, the usual one that i normally prepare.
Wait! can’t this be given a little twist? How about using coconut milk? And…
