Grilled Eggplant With Mint Yogurt Sauce is a slightly different dish that can be served as a side dish along with the mains or else served as a starter too.
Last evening decided to make this Grilled Eggplant With Mint Yogurt Sauce as I had three large eggplant/brinjal/aubergine still left in my fridge. Just recently made the Baingan Bartha (check out the recipe here).
So, kept aside one of them to make a south indian dish from Tamil Nadu Kathirikai Gothsu.
This recipe is from one my cookery books but I have slightly modified to give it an Indian flavor.
For my friends who do not eat garlic, you may grill the eggplant using just the olive oil.
