  1. Remove the outer porous layers. Sometimes you may have to discard two to three layers until you reach the hard and firm inner layer.
  2. Take a wide bowl and fill it with water, add the curd into this and mix and keep aside.
  3. Now you have a cylindrical inner stem, cut this into discs and put them inside the curd-water.
  4. After the entire stem is cut into round discs, take 2 to 3 discs and stack them on a chopping board and cut them into small pieces (as shown above). Put the pieces back into the curd-water.
  5. Drain this water. In a pan take some water, add the drained stem pieces, salt, and turmeric and boil for 2 to 3 minutes.
  6. Coarsely grind the coconut, cumin seeds, few curry leaves, green chillies.
  7. Remove the cooked stem and drain out excess water.
  8. In a kadai, heat oil, add mustard seeds and urad dal, when the dal turns brown, add the red chilli torn into bits and curry leaves.
  9. Add the cooked banana or plantain stem and saute well.
  10. Next add the coarsely ground coconut and saute for couple of more minutes.
  11. Serve with rice and any other curry with gravy.
