The spiciness and pungency of this aromatic and flavorful vegetable dish comes from a combination of various spices that are roasted and ground together.
Roast all the ingredients under ‘spice mix’ until aromatic and then powder it coarsely in a dry grinder.
Steam the vegetables (potatoes, carrots, beans, peas, capsicum).
Take oil in a kadai, and add the chopped onions and saute until translucent, then add the finely chopped ginger and garlic and saute again.
Add asofoetida and turmeric at this stage and the chopped tomatoes, cook until the tomatoes are soft.
Add the Kohlapuri spice mix and saute for 2 to 3 minutes, add water and salt and allow to boil.
Put in the vegetables and cook on low heat for 5 to 6 minutes.
Add coriander leaves and serve with hot phulkas, naan or any Indian breads or steamed rice.
