Wheat Flour Halwa (Aate Ka Halwa)
Wheat Flour Halwa (Aate Ka Halwa) is quick, no fuss sweet preparation that can be made with just few ingredients easily available in the kitchen.  Though a south Indian, was born and raised in Mumbai, and my mother generally had her own version of each recipe that was a fusion of different regional cuisines.

Ingredients

  1. Break the cashew nuts into small bits.
  2. Heat little ghee, and fry the broken cashew nuts until they turn brown, then remove and keep aside.
  3. Pour the remaining ghee and let it melt a bit, add the wheat flour and quickly start stirring this clock-wise.
  4. Reduce the heat and continue stirring the flour and ghee. Use a long-handled spoon or spatula. Keep doing this until you notice the flour color changing and a nice aroma starts coming out. But take care not to burn the flour.
  5. Add 2 cups of water and stir rapidly once again to prevent forming of lumps. The hot mix may splutter, hence using long-handled spatula will help.
  6. Water will get absorbed and a dough like consistency will start forming.
  7. Add the sugar at this stage and continue to mix by scraping the sides and bringing it all together. Continue doing this for another 5 minutes, on low heat.
  8. Add crushed cardamom, fried cashew nuts.
  9. Remove the halwa to a serving bowl.
  10. Sprinkle some sugar (optional) and garnish with slivered almonds over this.
  11. Serve it warm.
