This is an easy version of the sharkara pongal using only rice, jaggery and ghee. We make this often as ‘prasadam’ on festivals, especially during Navratri. Using only three main ingredients with addition of cashew and other nuts and a dash of cardamom for flavor.
Can be prepared in less than 30 minutes. Today I used the organic crushed jaggery (almost powder form) that is available in stores. This saved the time of breaking and crushing the hard jaggery balls that we usually buy.
The ghee and jaggery quantity may be increased according to your preference. For this recipe, I have recommended 2 tbsps of ghee, this may be increased to 3 or 4 tbsps.
