Sabz Kohlapuri is a spicy and aromatic mixed vegetable dish. A combination of spices are roasted and ground to a coarse powder which gives the flavor to this. This special spice mix is rightly called the Kolhapuri Spice Mix as it originated in Kolhapur, a city in Maharashtra.
While browsing through some of my recipe collections in my diary, I came across this recipe that I had copied from Femina several years ago. Since there were all the vegetables that I would require to make the Sabz Kohlapuri, at home decided to make this. I particularly liked the spice ingredients in the recipe and could well imagine and get an idea of how the taste will turn out.
After the spices are roasting along with coconut and ground the ground paste smelled so good.
In most restaurants under the vegetarian section of the menu you will find this Vegetable Kohlapuri or Sabz Kohlapuri.
Sabz Kohlapuri can be eaten along with either chapati/roti, or phulkas, or parathas and rice.
