Ever wondered what to do with loads of onion greens?
Had bunches of them; the spring onions, left over after the Chinese menu day @home (when I had made the Schezwan Noodles and Vegetables In Chinese White Sauce).
Of course I cleaned and chopped the spring onions; the onion bulbs and the greens separately and stored them in the fridge. But then how long would they stay fresh? Had to make something using the onion greens, thought of mixing them with flour and making parathas. Or better still why not stuff them along with other veggies? After 10 whole minutes of deciding and re-deciding and undeciding (pardon me, is there a word like this? Undecided yes, but undeciding….never mind, this ain’t no grammar post), finally made up my mind.
Stuffed rotis or parathas it will be, but I will be folding and pan-toasting them in the Mexican ‘quesadilla’ way.
